Pascal Colas's table is a real guilty pleasure, featuring a number of cheese and Jura specialties. We'll leave decency on the doorstep, and won't regret putting on a few pounds, for these generous, comforting dishes: fondues, comtoise, vin jaune, morilles, cancoillotte and mouillettes, three maturing Comté cheeses, a good Jura tartiflette, croûte forestière or even boîte chaude.
