The desire to do things too well sometimes pushes the chef to add ingredients when it would be better to remove them. But above all, it's to please his customers, who come back for more, in this contemporary building that the people of Niort know so well, on the outskirts of town, between a business park and a country corner. The regulars are pampered in their dinners and on the market menu, while newcomers are a little less so, but all goes very well, especially on the terrace in fine weather. A high standard of service, a variety of attentions, and elaborate plates: sphere of scallop, Jerusalem artichoke emulsion, all flavored with smoked fish and Buddha's hand, a starter that's a little complicated but very fair and pleasing in flavor, filet mignon confit with seeds and mirror sauce and herb gnocchi, poached pear with tarragon, hazelnut, cocoa and rum crumble, which still shows a lot of work. Classic cellar, choice by the glass announced by voice.
