The restaurant is still expertly run by Laurence and David Seguin, who live out their passion by pampering their regulars and offering the city this special experience and two-toque cuisine just on the edge of downtown. Well-structured menus, with the best set menu at €68 offering a choice of distinctive and appealing dishes: scallop and pear carpaccio, buckwheat and dandelion greens, pan-seared sea bream fillet with saffron potatoes and bouillabaisse reduction, seared pigeon fillet with offal cutlet, mushrooms, salsify, and meat jus. Lièvre à la royale when in season, good desserts based on classic recipes, and a wine cellar with excellent selections.
