Chef Yasunari Okazaki has jumped ship to pursue a personal project, but the Alléno school, with its well-structured management and hierarchy, shouldn't suffer much from this departure. The new generation of sushi masters, trained in excellence, is assured of excellent service, as is the supply of extraordinarily fresh fish and seafood. The Omakase experience is the most interesting, starting with five dishes under the Alléno signature, before the collection of twelve sushi dishes presented by master sushi chef Naoki Kikuchi, and the shared-inspiration desserts (amamis) created by a strong pastry team. A wine, sake and tea cellar to suit all tastes.
