Gault&Millau's review2026
From one climate to the next, Emmanuel Kouri writes a wild, plant-filled score, nourished by his experiences with Alléno and Frechon. This very Voltairian garden is an ode to the kitchen garden and to plates reduced to the essential, a desire to cultivate tomorrow's taste simply and better. In the dishes, you'll find the same clarity already displayed on the menu, a quiet, superb arrangement of things: asparagus on the grill, a marinated sardine and peppermint sauce paloise, purple artichoke à la romaine and virgin shellfish with coriander leaves, peach return flowered with tandoori and steamed brocoletti with lime and Corinthian sauce, caramelized apple, fennel sorbet and green anise meringue.
