Gourmet Restaurant That was Balagan, today Kapara. The same teams, trained and led by Asaf Granit, who himself greets guests with his eternal little cap on his head, have the same energy. And the recipe remains the same: Levantine cuisine of the highest quality, which, as in Tel Aviv, draws on the diverse influences of the surrounding regions. Chef Zohar Sasson pops in, says hello to her friends, but it's Moussa who brings out the plates at a good pace, mixing flavors, acids, bitters, fruitiness and spiciness in a menu where, of course, nothing is banal: octopus gets a little carried away by candied grapefruit and vinegar, parsley and coriander support finger-licking chicken keftas before a chocolatey dessert delight, something simple and addictive, like a mousse, olive oil and three grains of salt. The very relaxed service nonetheless achieves a certain efficiency, and the wine by the glass is rather anecdotal.
