Gourmet Restaurant This is Hélène Darroze's chic bistro, where the chef takes a step out of the Landes region to create a modern cuisine that's open to the world. We discover imaginative, well-crafted combinations that are a good introduction to her world: sashimi of Saint-Jean-de-Luz red tuna, radish and ponzu vinaigrette, creamy burrata, pea salad and Adour kiwi with fresh wasabi, puttanesca-style sardine kefta with capers and taggiasche olives, yellow Basque chicken, green asparagus and morel mushrooms, Arbois yellow wine sauce, cardamom and caramel rice pudding with the last citrus fruits of the season. Cellar adapted.
