It's an unmissable stopover in Champagne, where frequent travelers know they'll be well received, both at table and in the hotel. Chef Jérôme Feck is at the helm of this institution, faithful to his post and as diligent as ever, offering exemplary bourgeois and French cuisine. The two menus at €86 and €125 are always well updated, with a 64°C egg, summer truffle and creamy champagne sauce, roasted st. Pierre, pistou with Baptiste Raimbaut oysters and rice noodles, hazelnut-crusted veal fillet, yellow and green zucchinis, tarragon jus, red fruit pavlova and mint verbena ice cream. Remarkable cellar.
