Having worked for Marc Tupin and Franck Derouet, Emmanuel Chamouton has a wealth of experience and know-how, which he is now applying to his own ideas. In partnership with young Manon Mercier, he has taken over the entre-potes next to the theater, giving the prefecture one of its most promising tables. The two Jurassiens imagine a fine semi-gastronomic cuisine, respecting all the ethical commitments of our time, the taste of the seasons and the preference for locavore, in the service of a contemporary cuisine. Formulas range from €28 for lunch, to €65 in the evening for the six-course menu.
