Chef's Restaurant It's unquestionably Nevers' finest table, a status carefully preserved by Jean-Michel Couron, always attentive to the detail of his plates, and to the excellence of his service. With its wealth of experience and knowledge of the finest standards, this valiant establishment remains the place to go for special occasions and business meals, for its bourgeois charm and relaxing, subdued atmosphere, where the chef's compositions come across like the lead in a play. The €55 menu offers unbeatable value for money, starting with a tuna carpaccio with soy sauce, pea mousseline, cives and mint, followed by a fillet of grilled Erquy pollack, asparagus and shiitake mushrooms, lasagne leaf and wild garlic cream, a roasted veal knuckle, jus with piquillo peppers, artichoke tart, chorizo and fried onions. Nice cellar.
