The 4-star hotel in the heart of the Marais district (formerly known as Murano) is the setting for an express trip to Latin America, to discover Peruvian flavors in an inspired, sunny setting. In this indigo and gold-hued space, surrounded by luxuriant vegetation, the experience offers a definite change of scenery; the menu features dishes evocative of Juan Carlos Récamier, quinoa and corn salad, pork and red bean purée, the must-try ceviche, grilled fish with carrot purée, coriander oil and huacatay, beef fillet, vitelotte potatoes, sweet potato purée and Peruvian béarnaise... And don't forget to try piscos, the country's traditional brandy.
