Chef's Restaurant We've been following David Etcheverry for so long that investigators in the region take pleasure in it in advance. The town was abuzz with festivities, the terraces full of people overflowing with joy, contrasting with this quiet spot to enjoy the evening. The chef is still the same scrupulous craftsman, taking care of everything, paying attention to detail. Mastery in a calm atmosphere, with the young manager diligently taking care of the end of service. The work on the plate is meticulous: split pea and Espelette pepper velouté, Loire Valley white asparagus, Corsican ewe's milk shavings, seaweed and lovage-smoked milk, pollack, pan-seared cuttlefish, broad beans and rock fish jus. A good tartelette with tuberous chervil, yuzu cream and grated white chocolate (a little superfluous), once again showing impeccable technique. Quite a broad wine list, with a little organic, some natural and some conventional, and a decent range by the glass at around €13.
