Chef's Restaurant
The cuisine of the seasoned chef David Etcheverry always reflects skill and good taste at this well-located restaurant in the heart of the city. The well-designed set menus at fair prices do not overshadow the beautiful à la carte dishes, whose mastery and balance remain his signature: chanterelle ravioli with ricotta and shiso; line-caught sea bass with mogette beans, parsnips, and caraway; and twice-cooked squab with blood sausage, celery, and tangy quince.
