Joan Sampietro brings to life one of Sisteron's best addresses, a charming bistronomic table just opposite Notre-Dame des Pommiers, with a small shady terrace. The chef imagines modern versions of classic recipes: an œuf meurette, pork belly from the Thoard charcuterie, port and green cabbage; a tajine of octopus, sea bass and monkfish, lemon confit and fried parsley; a quail in two courses; a trunk stuffed with foie gras, confit legs and vitelotte potato gnocchi; a tiramisù-style charlotte with Ethiopian mocha.
