At the gateway to the Morvan nature park, Jérôme Raymond has transformed this house into one of the finest addresses in the southern Nièvre region. A beautiful 3* hotel and gourmet restaurant, the place is a recommended stopover, for its comfort and modernity, and the excellence of its cuisine, which is traditionally inspired but never boring. The chef revisits his classics: poached egg with white asparagus, grilled rapeseed oil vinaigrette, grilled ventrèche, roasted brill fillet with risotto and braised fennel, steamed snow peas and beurre blanc sauce, paris-brest with hazelnut praline, orange paste and banana-caramel ice cream. Good cellar with over four hundred references.
