Chef's Restaurant Valiant and deserving, Jérôme Raymond is a great professional who brings the southern Morvan to life with this indispensable stopover. His hotel, well modernized over the years, has all the assets of today's inn. Everyone here knows how to make you feel at ease, without unnecessary fuss, and the table is also well set on its four feet: notably with an impeccable "Mes racines" menu, which for €49 features Miéral guinea fowl ballottine, parsley root mousseline, roast pike-perch back on skin, spinach, risotto and beurre blanc, pear mousse and hazelnut cream, shortbread cookie and lemon sorbet. A tasting menu at €106, referenced local producers, a good classic wine cellar with a strength in Côte Chalonnaise and Mâconnais allowing us to touch fine bottles at around €50 (Dureuil Janthial's Rully, for example).
