On the outskirts of Pamiers, this Hôtel de France has a reputation for regularity, providing the sous-préfecture with a hotel and dining experience that's always up to scratch. It's a cuisine of intelligent simplicity, with well-crafted dishes in good rotation: a velouté of organic leeks and potatoes from Saint-Félix de Rieutord, whipped cream with walnut oil, a back of saithe with sauce vierge, basmati rice and seasonal vegetables, a leg of black Astarac hen, mashed potatoes, a caramel and Madagascar vanilla flan.
