Gault&Millau's review 2022

Haute tradition pays tribute to Henri IV's minister. In the setting, it's grand siècle, in the plate, it's more modern, around values shared by the guests and the chef, Maître-restaurateur Yves Dessaint: foie gras confit with plum, rack of lamb with potato confit and potimarron, hot soufflé with Olivet pear in the good €37 menu. A warm welcome from Stéphanie, the chef's wife, and a regional and general wine cellar.
