Hiély has long been an Avignon institution, guaranteeing a fine regional experience. For the past few years, Gérald Azoulay's desired experience has been frankly South American and, more specifically, nikkei, an Asia-Peru mix that is a real change of scenery for the locals, with dishes and ingredients far from Avignon: scallops leche nikkéi calamondin achiote, sea peach with olive-tree embers beet rocoto and black garlic, butcher's cut with caja china acopa juniper aji panca gin pepper chapa... The initiation can be done at lunchtime with four courses for €55.
