Michel Portos, our Cuisinier de l'Année 2012 (in his previous life, at Saint-James in Bouliac) signs the menu of this table in the heart of Paris, where this unconditional fan of OM (he was born in Marseille) has imagined a cuisine with strong Mediterranean accents: beef tartar with knife, tomato confit, hummus, pine nuts and pomegranate molasses, snacked octopus, black garlic-dashi, parmesan shortbread and octopus juice, roasted apple tatin style, vanilla cashew cream and passion sorbet, for a dessert and vegan, like many dishes on the menu.
