Chef's Restaurant It's always a pleasure to measure how good doesn't have to be complex. Here, chef Hidenori Kitaguchi demonstrates the truth of the adage "less is more" with frank ease, cooking an unpretentious market cuisine, simply following the seasons, and focusing on respect for the product, never seeking to distort it, and combining it in logical, reassuring compositions. These include snacked bonito and white asparagus à la flamme, chicken supreme with chanterelle mushrooms and green asparagus, raspberry dacquoise tartlet with red fruit compote, blackcurrant pastille, crème diplomate and dark chocolate and praline ganache.
