In the former fiefdom of the Bossé family, chef Alexandre Tessier invites us on a culinary voyage, with unchanging dishes such as pâté croûte with homemade mustard, but also a crab with celery remoulade and wasabi with a touch of finesse; game is present with marcassin de chasse or stuffed quail, but the choice of turbot bourride with seasonal vegetables is also available; the pavlova in different textures, passion fruit and mango juice showcases the talent of the head pastry chef, who happily accompanies the chic bistro side of this table; the wine list is superb, with bottles that give pride of place to the respectful winemakers of the Loire Valley.
