As we are finalizing the France 2027 guide, we have learned of the sale of this iconic hotel and restaurant in the Loir-et-Cher department to the Nao Collection group, which already owns the Brittany in Roscoff (29).
Didier and Marie-Christine Clément have brilliantly steered this establishment for 46 years, taking over in 1980 from Marie-Christine’s parents, who had acquired it in 1961. We have no doubt that the hotel’s services will remain top-notch. As for the kitchen, it has been entrusted to Loïc Le Bail, chef at Nori, the Brittany’s gourmet restaurant. A recipient of the Gault & Millau d’Or award in 2025 for the Brittany guide, Loïc, as executive chef, will ensure that the high culinary standards of this establishment—now managed by Éric Hertz—are maintained. We are, of course, withholding our rating for the time being while we wait to discover the new menu created by Loïc Le Bail and executed by one of his sous chefs.
