Le Lion d'Or has stood the test of time with rare elegance. In this house, which celebrated its 250th anniversary in 2024, Didier Clément continues to defend with conviction the Sologne region that he helped bring onto the French gastronomic scene. The dining room, recently reinterpreted by the d'Offard workshop, has been given a heritage splendor in keeping with the history of the place, while the interior terrace remains one of the region's most pleasant refuges. The cuisine remains true to the chef's signature: respect for the product, a taste for herbs, spices and plant-based flavors, a sensitive reading of the terroir. Asparagus, superbly fresh, opens the ball with delicacy. A "poulette" velouté with aniseed notes, enriched with morels, adds a comforting gourmet touch. The lobster, served in two sequences, impresses above all with its impeccable quality. The warm version, accompanied by a generous Armorican sauce, precedes a fresher, fruitier interpretation of the shellfish. For dessert, seasonal strawberries fully express their character, notably in a warm, intensely flavored variation, accompanied by dulce milk ice cream. As the meal progresses, however, certain choices reveal the need for a second wind, such as the recurrent use of jellies from another era, or the very tight (too tight) menu, which leaves little room for discovery or personalization. The attentive service is a serious accompaniment to the whole, even if the wine advice could be given more prominence in the context of such a prestigious cellar. What remains is the pleasure of rediscovering an address that has left its mark on the recent history of Loire gastronomy. Behind this cuisine of memory and transmission, we sense the first stirrings of a new chapter, without yet altering the singular soul that has so long made the Lion d'Or's reputation.
