Opposite the abbey, a mecca for Gregorian chant, the Grand Hôtel de Solesmes has entrusted its stoves to a young chef from the Var, Michaël Labat-Gest, who perpetuates a cuisine in keeping with the place, imbued with seriousness and classicism, in a hushed atmosphere. The goat's cheese, honey and lemon ravioli are a little firm, but the red mullet, grilled on the skin, is served in a bouillabaisse-style dish, on a rock fish soup, the chef's homage to his previous region; desserts are in keeping with the traditional spirit of the menu, with a citrus pavlova or a hot Cointreau soufflé; we'd like to see a breath of fresh air in this undeniably charming place, which has been owned by the Jacquet family since the 60s; the wine list doesn't go against the grain, with the usual sureties from the Loire Valley.
