Chef's Restaurant Valentina Giacobbe and Julien Ingaud-Jaubert began their adventure behind a simple, unassuming façade in the center of town. After meeting at Gagnaire's, their career at Rozó, Meurin and Clarance forged their identity, firmly anchored in a foundation of mastered technique. The precision of the flavors, the precise proportions of the accompanying juices, such as the cucumber water pearled with green oil around the raw lean as a starter, or the powerful and original anchovy cream accompanying the perfectly cooked cod, make each plate an interesting journey between North and Asia. Vegetables play an essential role in the couple's gastronomic universe, and a vegetarian menu completes the offer with cucumber and fig leaf, seaweed gnochetti and split pea ragout. The Harmonie menu at €69 or the Ginko menu at €89 give you all the keys, with seasonal and local produce, such as monkfish with beans and seaweed or langoustines with peppers and combawa, and Steenvoord pigeon or roast pig fillet with tomatoes stuffed with quinoa and capers.
