Gourmet Restaurant Gilles Tournadre's bistro is what you might call a very good "product": ideal location on the Vieux Marché, well-briefed staff, professional and varied service. The menu is very much of its time, with a ladleful of home-cooked dishes, a touch of modernity and flavours from elsewhere, and the trick is frankly well done: hot sausage from Sibilia, ricotta cucumber on a fine walnut crumble tart, Caesar salad, veal quasi caviar with eggplant and herb pesto... And the small cellar goes well, by the bottle, pitcher or glass, with the Vissoux windmill or the Entrefaux crozes.
