The name is an obvious reference to the twins who launched this beautiful restaurant: Clément, the entrepreneur, and Maxime Le Meur, the chef. The latter, strongly influenced by Jean-Pierre Vigato, with whom he worked at Apicius and then Lapérouse, imagines a cuisine that is both vegetal and focused on land/sea associations and accompaniments that are often unexpected and deliberately disconcerting. It's a wonderful experience, as is the service, which is committed and smiling.
