Gault&Millau's review 2026
Gourmet Restaurant
On the Place du Marché des Chartrons, Le Gabarre makes its intentions clear right from the sign: a bistro for drinking and a wine cellar. A narrow dining room lined with bottle racks, an open bar at the back, and a paved terrace on the square. The wine cellar is the real draw: Maxence and Valentin Gicquel have been building it since 2024 by meeting with winemakers, resulting in a deep selection of Bordeaux and Burgundy wines, with prices ranging from €28 to premium bottles. We’d just like to see the wines organized by region, which would be easier to navigate than by grape variety. The cuisine, served as dishes to share, follows the same philosophy of enjoyment. The seared squid, served with a light sauce of chili-infused oil, scallions, and puffed buckwheat, is the highlight of the meal. The ham croquettes and the satay-style egg with mayonnaise are well-executed classics, while the beef tataki would benefit from a bit more spice. The two desserts—strawberries with whipped cream and chocolate mousse—are light, clean, and well executed. The service, led in the dining room by one of the two brothers, is warm and attentive from start to finish.
