This young establishment in the center of town has quickly established itself as one of the new sensations in the area, offering refreshingly modern cuisine from the Collard sisters and Valentin Lagraa. At lunchtime, Julie Collard takes charge, while Valentin takes over in the evening. Highlights include grilled mackerel, carrot, dashi and rapeseed oil; pollack, broccoli purée, chard, lemon condiment, coriander and bone juice; poached pear, orange marmalade, meringue and bay leaf.
