Remarkable Restaurant A work of goldsmith! Every year, it's unanimous among our investigators: this guy, he's terrible, he's precise, he's masterful, and each dish can be reduced to a very simple title, hiding meticulous work to flirt with perfection. Did you say "knife"? Here's the knife, diving, garnished with diced knife, tapioca beads, caviar, apple-yuzu condiment, calamansi vinegar and decorated with borage and oxalis flowers... Did you say scallops? They are covered with tempura nettle leaves and oxalis flowers delicately placed on a turnip velouté enhanced with lovage. And the veal fillet? Cooked pink to the millimetre, cushions of chard leaves prepared like ravioli, a beet-raisin condiment smoked and topped with veal jus. A delightful feast in a refined, elegant setting, with perfect service right through to dessert, a chocolate quenelle tart adorned with gold leaf, coulis, grués and fine fingers. A highly diversified wine list, with winemakers honored by the sommelier (Pierre Vaïsse, Michel Brotons, Charlotte & Amaury De Poix...).
