Always in the right tone, precise, assertive, Frédéric Simonin embodies this generation nurtured on Robuchon's milk, combining precision of gesture and a sense of just taste. His handsome bourgeois salon just off Les Ternes is always busy, with a loyal clientele seeking out the work of a master with the tricolored MOF label, trained by Philippe Legendre and Michel Del Burgo, among others. While the €78 lunch menu is a deserved success, it's in the "inspiration" formulas, from €135 to €200 depending on the number of courses, that we see the craftsman, who was awarded a Gault&Millau Techniques d'Excellence trophy two years ago. Meticulous appetizers (including his classics: foie gras royale, madeleine with herbs), beautiful scallops with cazette mushrooms and a remarkable jus des bardes, before a Couteaux-style hare à la royale that shows a chef who knows the finest attributes of grand bourgeois cuisine. The dessert, a tribute to Pierre Hermé, litchi framboise eau de rose, is pleasing, the cellar quite extensive, wise and classic, well varied up to a section of world wines, and the excellent Pascal Drouet brings to the room, with his ease and precision, an indispensable touch of professionalism.
