In the restaurant, precision and respect for tradition are combined with an up-to-date vision of marine cuisine: oysters by Sébastien Le Guern, hake back with shellfish cream, sea bream gremolata and smoked eel, guinea fowl from Challans, leg in pastilla with buckwheat cream macaire apples... Well-constructed menus, very good service.
