Chef's Restaurant The most Swiss of French ski resorts has retained the old-fashioned charm of the hotels of yesteryear. For the time being (and so much the better), the big groups haven't arrived in Châtel, and families are keen to keep these charming houses open. Just outside the village, and a few metres from the border, Fleur de Neige is a gourmet stop where the customer is taken seriously. The menu offers a plethora of choices, but here almost everything is homemade. Sébastien Trincaz, assisted by his father Philippe, has succeeded in meeting this daily challenge, because here, the tradition is handed down gently. The cuisine is generous, and has gained in elegance and finesse. Sauces are lighter, plates are more colorful, and the balance is almost perfect... As for desserts, the mango and passion fruit éclair is very well made. The well-stocked cellar offers some lovely bottles, and even wines by the glass and in deciliters (thanks to our proximity to Switzerland). A good time that can be extended on the terrace overlooking the valley, or in winter in igloos, an original experience at 1,200 m altitude.
