Gault&Millau's review 2026

A timeless address not to be missed, Le Flavio is a Touquet institution. Founded in 1949 by Flavio Cuco, it was here that Lucien Ginsburg became the great Serge, and his piano still takes pride of place in the dining room. As for the kitchen, it's in the hands of chef Jozef Skurzynski, who reinterprets in a free-spirited way. While the low-temperature monkfish with rhubarb does rather well, swimming in its vegetable jus topped with butter, one wonders about the presence of this white asparagus panna cotta at the end of October. The red mullet and its "first sunny vegetables" are also intriguing, and we try the guinea fowl onions and burnt eggplant, a good idea with a juice that could have been more concentrated. The dessert menu is full of surprises. Poire au vin jaune, crème légère au foin and caramelized arlette make a lovely melody. You can also enjoy a few long drinks in this elegant atmosphere, with its pretty plants, even if the service was a little lacking.
