Across from Le Chambard, Flammes & Co has found its niche under the direction of two former Olivier Nasti staff members, Yoan Jacquet and Pierre Moiso. The concept is simple yet impressive: flambées reimagined to reflect the seasons, bridging the gap between modernity and tradition. The ideas are executed flawlessly: a flammekueche au gratin, with Munster cheese, scallops, cured ham and Parmesan, Caesar-style chicken, or even crème brûlée.
