Above Saint-Jean-de-Luz, in a natural setting that epitomizes the charm of the Basque Country, Stéphane and Véronique Poulain run this adorable 17th-century farmhouse, the ideal setting for a modern country inn where you can rediscover the true taste of the region. The menu doesn't invent anything, but it lines up timeless pleasures: roasted octopus and Basque blood sausage, fine ratatouille and sheep's espuma, txangurro with lime and creamy artichokes, line hake with peas and ratte apple mousseline, salicornes and langoustine/ginger broth, grilled Manex pork loin, confit brisket, sesame eggplant, pak choï cabbage and black garlic jus, and corn cookie, dark chocolate ganache montée, creamy corn, chocolate sauce and rosemary. Wines from the Southwest and Spain.
