Gourmet Restaurant Having worked at Constant and Nomicos, chef Ryuji Sato demonstrates his dual Franco-Japanese culture at work. His fusion dishes are well complemented by Félix Perrotte's cellar selection, which is predominantly natural. The product is brought to the fore with a fine sense of presentation, a starter based on white asparagus, a declination of artichoke, perfect egg and tarragon espuma, monkfish lacquered on the barbecue, anchovy, fennel and whelk sauce, Kalamata olives, lamb with binchotan, hearty jus, black rice risotto, piperade sauce, parsley and black garlic condiment, panna cotta with mint, hibiscus, aperol and orange.
