Jérôme Faure, the very fine chef who delighted us in the Vercors and more recently at Fontenille, is now at home, perfectly in his role and at ease in this "chef's house" that he runs in his own way on the Avignon-Apt axis, welcoming customers from the Luberon who find here the cuisine of a chef without the fuss of a palace. This doesn't stop the plate from showing its talent, from the €27 lunch menu to his remarkable €50 dinner, where technique and product express themselves with personality: ikejime trout from Isle-sur-la-Sorgue sashimi leek ponzu saffron vinaigrette from Gordes, snail ravioli black garlic Colonnata green curry coconut, farm pigeon from Poitou, filet rosé leg confit royal offal juice infused with licorice, gourmet dessert with Bonnat chocolate, caramel and coffee. In the dining room, the atmosphere also takes on warmth and identity, allowing regulars and one-night visitors alike to make the place their own.
