In this lovely house named after the Via Domitia, Jérôme Faure, who we first met at the Domaine de Fontenille, continues his fine personal work, presenting here his signature cuisine and attracting all the region's gourmets. Beautifully decorated with frescoes by Hervé Thibault, the dining room immediately instills an artistic spirit, which is logically reflected in the chef's compositions. Discover a bisque of crab and chickpeas, lemon, Mediterranean blue crab meat and Thai chili paste; a roasted sea bass with bread, different types of cabbage, anchovy paste, kumquat condiment and tangy sauce; a lamb from the Alps, selle rosée, sweetbreads meunière, grilled panoufle, carrot and lemon, sumac yogurt, orange blossom juice, or a campari grapefruit cream, meringue, candied grapefruit, crunchy shortbread and fresh Bonnieux goat sorbet.
