It's impossible not to repeat year after year that this estate with its breathtaking sea views, where old stones, flowers and shrubs create a universe like no other, is a stopover of unparalleled charm. The immense dining room may not lend itself to intimacy, but its majestic panorama is sure to leave a lasting impression. The sea is a natural guest at the table. In fact, it's Maxime Nouail's passion, and whether the seas are calm or stormy, he serves up some very classic and generally well-mastered dishes. If fine oysters don't tempt you, a thin slice of Landes de Lanvaux foie gras will do the trick. Perfect in color, texture and taste, it is enhanced by a duck jelly with chouchen and a variety of apples (candied with honey and chouchen, raw, in jelly...) for freshness, and goes well with a nice slice of warm homemade brioche. Back from fishing with roasted monkfish medallions, curiously served with a mustard jus, not entirely convincing in the middle of summer. Good point, however, for the girolles and the declination of celery (remoulade, confit and in mousseline). A timeless final touch with a chocolate soufflé that's well cocoaed but could be cooked more precisely. The delicious Tonka bean ice cream puts the smile back on your face! Well-run service, with no downtime. Superb list of whiskies and digestifs in general. An impressive cellar book, punctuated by noble and beautiful references: saint-joseph from domaine Coursodon or David Reynaud, saint-romain from Alain Gras, muscadet Sauvion, palette from Henri Bonnaud, jura from domaine de la Pinte, jurançon from Clos Laplume, corsican wines from Abbatucci...
