To accompany this dream setting, chef Maxime Nouail logically works the sea, exhibiting a creative and sought-after vision of marine produce. Seasonal menus keep us coming back year after year, for large langoustines breaded with coastal herbs, caviar and seaweed, velouté of broad beans, medallions of lobster roasted in sparkling butter and head juice with sherry wine, roasted brill, morels and early vegetables, bone jus and savagnin cream, two-cooked lamb, flame-grilled and roasted, zaatar polenta, carrot tops and lamb jus, chocolate soufflé, orange and ginger passion sorbet.
