Lovers of tradition come to treat themselves at Domaine de Clairefontaine, a manor house whose foundations date back to the 17th century, and whose dining rooms have retained the cachet of grand old houses. Philippe Girardon, MOF 1997, perpetuates a classic cuisine based on noble products such as foie gras, pigeon from the Terres Froides and lobster, but he also adds his own know-how and creativity. He likes to showcase local produce such as the traditional Ampuis chard, celeriac from Saint Prim and lobsters from the on-site fish tank. The dishes are refined, the presentations elegant, and the Arctic char confit then grilled is worth the trip alone. The desserts are innovative too, with passion fruit and sweet potato, honey and oat crumble. As for the family tradition of hospitality, the torch has already been passed between Laurence, who takes care of every detail, and Amélie, who breathes new life into the same guiding principle. The two generations are assisted by Dominique Viala, master of the cellar, who guides each table through the magnificent selection of wines from the Rhône region and beyond...
