Chef : 1 restaurantRomain Casas got into the restaurant business by chance... and by greed. "When I was atsecondary school, a friend told me that there were open days at the Lycée Hôtelier and that all they did there was eat. I went along, and fell in love with the atmosphere, the kitchens, the brigades..." he recalls. That's how he began his career, in Morlaas (Pyrénées-Atlantiques), then in the Basque country, at Chez Château.
He then worked as a commis, then chef de partie, at Carré des Feuillants with Alain Dutournier, before returning to Chez Château as chef. In 2014, he opened Vivien Durand's tapas bar in Pau, and flew to London. There, he worked at Pascal Aussignac's Club Gascon, then at the Tate Modern restaurant.
As for Tiphaine Mollard, she started out at the Alain Ducasse cooking school, before joining the kitchens of Le Benoit (also owned by Alain Ducasse), where she rose through the ranks. "I stayed there for three and a half years. I started as a commis, and ended up as a sous-chef," she explains. In 2018, she joined Le Club, a Parisian restaurant at the foot of the Eiffel Tower, run by Christian Etchebest.
It was there that she met Romain, with whom she opened Le Deux in 2021, supported by the Dotation Jeunes Talents Gault&Millau. "It was a real boost," confides Romain. A year later, the Guide Jaune awarded them the Jeunes Talents Île-de-France trophy and selected them for the 2023 edition of book 109 - Le Sang neuf de la gastronomie française. "It was a real consecration," say the two chefs.
