Simple, well-prepared cuisine at this restaurant in the Hotel Miramont, one of the best stops in the resort. The owner's welcome is friendly, the regulars are on hand and the service is smooth. A little research on the plate, sometimes a little daring associations, but the whole remains wise with the regional organic green asparagus, black pudding and grilled sweet potato, tomme espuma (we could have avoided the latter), the fillet of line hake, cooked to perfection, tarragon sauce, chive risotto, snow peas before the blueberry and lemon curd sablé, some strawberries, blackcurrant sorbet, chantilly and a welcome basil pesto. A wine list focused on the South-West and Pyrenees, with cognac and armagnac prominently featured.
