The chef runs four establishments, all of which are dedicated to passing on the region's heritage, with anthology dishes created with exemplary savoir-faire. The Saint-Jean district address has the advantage of a beautiful location, ideal for discovering these great classics: green lentil salad à la lyonnaise, smoked salmon and canuts brains, eggs en meurette, pike quenelle with Nantua sauce, calf's head with ravigote sauce, the famous blanquette de veau...
