Chef's Restaurant The original is here, in this long rue de Créqui, a stone's throw from the Halles: you are indeed in the lair of the master, Joseph Viola, the inspired MOF who one day decided to give the bouchon its letters of nobility, to sanctify the tête de veau and the saladier lyonnais. Admittedly, over the last twenty years, and especially when the master isn't there to watch over everything, the magic has been a little less effective, but the faithful still come back most of the time with an unrivalled pleasure, that of tasting majestic dishes, pâté en croûte, quenelle of pike in Nantua sauce, stuffed poultry tournedos and its "jus grassouillet", because of course the menu offers high-flying tradi that goes beyond the purely local. A friendly atmosphere, a good cellar and a rare moment.
