Tradition is good, and Sparnans know how to find comfort and good taste at l'Épine. A young chef, Thibaud Reppert, is now in charge of the kitchens at this institution, and he's doing a fine job of it, retaining his two toques on a menu-card of the moment: pastrami zucchini olive with honey mustard sauce, rack of porklet potimarron girolle jus corsé, fig sablé breton yoghurt port, a rather modest sequence, but well turned out and well served.
