It's a long way from Paris that Ingrid and Nicolas, regulars at the palaces, decided to open their table and chambres d'hôte, a little cocoon at the foot of the Albères mountains. Ingrid and Nicolas have both worked at the Ritz and the Intercontinental, and Nicolas was formerly second-in-command at the Tour d'Argent. The couple's savoir-faire is evident in their intelligent local cuisine and friendly atmosphere. For €44, try warm veal head with Charroux mustard, crispy king prawn mint and refreshed cucumber, Monsieur Bonzom's pig confit miel-gingembre, Catalan poultry supreme en piperade, black olive butter, apricot clafoutis and bitter almond emulsion.
