Chef's Restaurant Etheliya Hananova, sommelier, and Noam Gedalof, a former member of Le Sergent Recruteur, form a complementary duo. The amuse-bouches open with a bang, from luminous gazpacho to melting gougères. Eggplant en persillade is enhanced by the romesco sauce, while the Corsican veal, well cooked, lacks coherence between its garnishes. The chocolate soufflé, airy and intense, ends on the right note. The cellar, guided by the sommelier, stands out for its choice of independent winegrowers, solid references and discoveries that accompany the meal with relevance. An attentive table, which convinces as much by its seriousness as by its selection of wines. Menu Découverte at 120 €.
