Gault&Millau's review 2026

In the heart of the Carmes district, Combustible rekindles the flame of bistros right from the entrance, where cartons of wine litter the typical tiled floor. Virginie Guitard takes to the stage with a discreet eye on her dining room. No sophisticated presentation of dishes, just gourmet, bistro-style cuisine, such as gambas en kadaïf or lamb confit, with creamy polenta whose jus enhances the whole just right, before a well-made chocolate pecan dessert. Lunch menu at €18, good service provided by a smiling, competent young man. In the cellar, a regional bias and low prices, with a decent selection by the glass.
