Chef's Restaurant It's an understatement to say that things are swinging on the ramparts! It's been a long time since this admirable medieval city has been gently shaken up on the gastronomic front. The collective (Kévin, Jérémy and Danny) who have taken over the heart of the town have gone off the beaten track, surfing on the zeitgeist, even if it means being a bit disconcerting if you're not a fan of surprises. Even if the team claims to be a bistro, there's no andouillette, œuf meurette or crème brûlée on the menu here, just combinations that fully express the credo of a lively, often crossbred cuisine that "dares". Abalone, for example, can be paired with pig's trotter and garam massala, pear and truffle pâté, and even yellow wine. The impeccable caress of a watercress-ginger emulsion is a delightful moment, as is the superb pigeon with its iodized (cockles) and citrus (grapefruit) notes. As for the desserts, they don't disappoint, like the rice pudding/cress sorbet. All this is served in a relaxed, good-humored atmosphere in a very pleasant dining room, where the central glass kitchens and glass-roofed courtyard are the salient features. A harmonious wine list (mostly organic) with some fine signatures: savennières from domaine Dhommé, sancerre from domaine Thomas et Fils, pic saint loup Foulaquier, Corsica from Yves Leccia, crozes-hermitage from Laurent Combier, languedoc from Régis Pichon... A few foreign wines too (Spain, Italy, Portugal...).
