After beating the pavement, before plunging back into history as it bursts around every corner in the old town, this establishment ensures a joyful reconnection with modernity. The setting is inviting, a successful blend of stone, wood and glass. The discreet soundtrack, soul music on this particular evening, contributes fully to the warmth of the place and its relaxed atmosphere. The well-paced, multi-handed cuisine has a traveler's touch. It may not always escape the effects of fashion, but it bears witness to real savoir-faire. Pollack, for example, can make common cause with banana and peanuts. As for the delicately spiced bisque, it is the perfect accompaniment to a duo of Breton scallops and gambas. Finally, we head southwest with a Basque cake galvanized by the acidity of apples and a touch of shiso. An interesting selection of organic and natural wines that we'd like the service to highlight more.
