Gourmet Restaurant After Gaëtan Gentil's departure for the Confluence, this intimate venue near the Saône needed another top talent. Bastian Ruga took up the challenge, having assisted Gaétan for several seasons, after working with Christian Têtedoie and Heston Blumenthal, among others. He has made an encouraging start, already displaying a definite personality on the plate, working, like his predecessor, on hidden menus: Jerusalem artichoke confit, hazelnuts, vinegar and pomegranate gel, beautifully cooked cod, black garlic condiment and ginger brandade, interesting trout kefta, bone juice and sweet harissa, beet, onion, gin, a less exciting interlude, before lamb sweetbreads with lemon and corn like ribs and semolina cake, dates, orange blossom and agastache. A solid first toque while awaiting the sequel and an affirmation of this personality, like the developing wine list.
