Remarkable Restaurant He's got it, that third chef's hat that had to come. Because it's him, because it's here, in the heart of the Basque Country, in this emblematic village. The chef's creativity is evident in every visual, olfactory and gustatory detail. The stroll is delicate and aesthetic, but also deeply gourmet: beet, fresh herb ice cream, dashi broth and oxalis start off with a fanfare of finesse after the appetizers, to be followed by white asparagus, peanuts from the Darrigade farm, matraila (kintoa jowl) and a blanquette-style sauce, Galician beef of fine quality, garlic, anchovies and garden vegetables, beef jus. Flora, the chef's partner in the dining room, prolongs the harmony with a thoughtful and motivated team, the beer, brioche and yeast ice cream dessert is in the same tone, and the cellar is vast and inspired by all the regions, including a small selection from across the Pyrenees.
