Chef's Restaurant A magnificent 3* hotel in the heart of the Basque Country, run by the Chilo family for four generations, with a well-transmitted taste for tradition and hospitality. The charming house is still run by the parents, Pierre and Martine, while Marina looks after the hotel business. In the kitchen, Arnaud, a former Alléno chef, serves up a fine gastronomic plate: crispy free-range egg, Landes asparagus and wild garlic, line hake, small spelt risotto with scallop coral, grilled duckling with orange segments, potato millefeuille, chocolate textures with cardamom and rose des sables. Formulas at €39, €54 and €70.
