Chef's Restaurant Pierre Chilo and his family continue to make the Basque country sing in this enchanting valley. The house has become emblematic of an art of living in the heart of nature, in front of towering mountains and enjoying the wonderful products of local livestock. In the kitchen, Arnaud brings a modern twist to his approach to local produce, with fish from the Saint-Jean de Luz fish auction, cuttlefish sautéed in a saffron vol au vent or monkfish confit sucrine à la braise condimentée, while working with local meats with equal skill, for example, braised Soule beef onglet, bonbons de moelle de bœuf panés au charbon végétal and summer truffle, in a beautiful 74 e menu that speaks volumes about the region, right down to the ewe's milk cheese soufflé with creamy lovage. A well-stocked southwestern and Bordeaux wine cellar, and a generous welcome from a family who adopts you from the moment you step inside.
