It's always a pleasure to stroll along the quays of the Saône past the beautiful pastel facades, discovering here, with this table in view, a corner of nature in the city. Chef Pierre-Michaël Martin (aka Pimousse) offers a natural, no-holds-barred cuisine. Menus are blind, as are wines by the glass. We enter with an equally blind trust to taste the works of the Jeune Talent 2021: the herbaceous mimosa egg or the sweetbreads (declined this winter with celery and smoked eel), or the latest creations, such as the ravioles of black pork from Bigorre with strong pig broth or the monkfish with hare jus à la royale, perfectly cooked and audaciously combined, before a less convincing dessert, such as the chocolate curry which suffers from an overdrive of creativity. The wine list is well-stocked and the service more or less experienced, which sometimes makes the meal seem long (3h30 for seven courses, you have to program...).
