Gourmet Restaurant You can't touch an institution, and Pablo still has a long way to go, warming up Basque culture with his eternal dishes of terroir and memory: cod croquettes, fish soup, omelette basquaise, chipirons à l'encre, confit de canard and gâteau basque. Simple, effective, regular, irouléguy, tursan and Egiategia (underwater wine-making) in the glasses.
